Tanya's Potato Soup
Try Tanya's one-pot soup. She brought some into Bridges and we all had it for lunch. It was great!
What's in it?
- 2lb / 6 large potatoes
- 1.5lb / 4 large carrots
- 2 leeks
- 2 beef stock cubes
- 2 pints water
Stuff you need
- vegetable peeler
- sharp knife
- grater
- pot with lid
What to do
- Peel potatoes and chop up into cubes.
- Peel carrots, chop up two and grate two.
- Wash and cut up leeks.
- Add all ingredients to pot with 1 pint of water.
- Bring to boil, melt stock cubes with 1 pint of boiling water and add to pot.
- Simmer for about half an hour, stirring from time to time.
