Tanya's Potato Soup

Try Tanya's one-pot soup. She brought some into Bridges and we all had it for lunch. It was great!

What's in it?

  • 2lb / 6 large potatoes
  • 1.5lb / 4 large carrots
  • 2 leeks
  • 2 beef stock cubes
  • 2 pints water

Stuff you need

  • vegetable peeler
  • sharp knife
  • grater
  • pot with lid

What to do

  1. Peel potatoes and chop up into cubes.
  2. Peel carrots, chop up two and grate two.
  3. Wash and cut up leeks.
  4. Add all ingredients to pot with 1 pint of water.
  5. Bring to boil, melt stock cubes with 1 pint of boiling water and add to pot.
  6. Simmer for about half an hour, stirring from time to time.
