June's Bran Muffins -

Preparation time: 10 minutes

Cooking time: 20 minutes

What's in it?

  • 2 eggs (well beaten)
  • 93ml Sunflower oil
  • 200 grams brown sugar
  • 500ml buttermilk
  • 250ml natural bran
  • 125 grams seedless raisins
  • 180 grams cake flour
  • 120 grams wholewheat flour
  • 2 teaspoons bicarbonate of soda
  • pinch of salt

Stuff you need

  • muffin cups
  • a muffin tin
  • electric whisk or a wooden spoon

What to do

  1. Preheat the oven to gas mark 6 or 200 degrees centigrade
  2. Beat eggs, oil, sugar and buttermilk together thoroughly with an electric beater or a wooden spoon
  3. Add the bran and the rasins, mix in
  4. Add dry ingredients to the mixture
  5. Add spoonsful of the mixture to muffin cups that have been placed in the muffin tin
  6. Fill cups up to about 1/2 - 2/3 full
  7. Bake at 200 C for 20 minutes.

Note - The mixture can be stored in an airtight container in the fridge if there is any left over. The cooked muffins freeze well.
