June's Bran Muffins -
Preparation time: 10 minutes
Cooking time: 20 minutes
What's in it?
- 2 eggs (well beaten)
- 93ml Sunflower oil
- 200 grams brown sugar
- 500ml buttermilk
- 250ml natural bran
- 125 grams seedless raisins
- 180 grams cake flour
- 120 grams wholewheat flour
- 2 teaspoons bicarbonate of soda
- pinch of salt
Stuff you need
- muffin cups
- a muffin tin
- electric whisk or a wooden spoon
What to do
- Preheat the oven to gas mark 6 or 200 degrees centigrade
- Beat eggs, oil, sugar and buttermilk together thoroughly with an electric beater or a wooden spoon
- Add the bran and the rasins, mix in
- Add dry ingredients to the mixture
- Add spoonsful of the mixture to muffin cups that have been placed in the muffin tin
- Fill cups up to about 1/2 - 2/3 full
- Bake at 200 C for 20 minutes.
Note - The mixture can be stored in an airtight container in the fridge if there is any left over. The cooked muffins freeze well.
